Fresh Onion Salad Recipe
Onions!! 🧅 (Allium cepa L.)
I only found out that onions were considered a herb once I started studying Herbal Medicine 😅 This is a herb we use in our house on a daily basis and it’s one of the best natural remedies for the common cold.
Fresh onion salad is great food all year round because onions have lots of antioxidants, vitamins, antimicrobials and are prebiotics. Don’t consume it too often if you have issues with reflux or IBS as it can be irritating to the stomach lining.
👩🏾🍳Fresh onion salad recipe.
- 2 onions (red is best if you have a sweet tooth but any will do)
- Lemon juice
- 2 teaspoons of brown sugar
Optional:
Chopped spinach, lettuce, kale, cucumber, coriander and baby plum tomatoes.
- Chop the onions, add to a container and
- pour lemon juice on top until the onions are 3/4 covered. Half-way is fine if you don't have enough lemon juice. Some people like to add sugar for a sweeter, syrup-like consistency, however, this is absolutely delicious without it. The bitterness of the lemon blends well with the sharpness of the onion.
- Stir the ingredients together.
- Put a lid on the container and let the mixture sit for a minimum of 1 hour before eating.
That’s it! You’re done! Super easy and delicious.
If you're able to, you can make it the night before and add it to meals throughout the day. It's a great complement to green veggies for a more nutritious salad at lunchtime or had as a side dish with dinner. The onions are soft, potent and you can feel it working straight away.
